I don't work specifically FOR adult swim, I work for a contractor called "Radical Axis." I ran into a classmate at the Borders I was working at and gave him my card. Radical animation director, Craig went to my website and saw that I was competent and brought me in and here I am about six or so years later. If you have an interest in working for RA or Adult Swim, send them your resume, portfolio, and/or demo reel.

I want to help write scripts and storyboards, fo sho. But i'm not really sure all the different types of jobs it takes to make a cartoon

Hmm... THere I don't know how to advise you. I want to do scripts and storyboards too, but my training as an animator has actually hindered me, in that they want me only on the production end. But then again, I work for a contractor, not Adult Swim. Perhaps studying to be a production assistant and getting an internship AT Adult Swim, working your way up from there would be the best way to go.
Or work hard to be the next Homestarrunner in your spare time.
