I actually don't know how Ariel and Jim came to be a crossover couple, but I heard that it kind of sky-rocketed after iesnoth wrote Landlocked, which is a sweet fanfiction crossover between the two. She's actually here on DeviantArt, you should go check her out, she's made a TON of Jim/Ariel stuff
I discovered Jim and Ariel a couple of years ago, thanks to YouTube videos lol.
