Just curious, is there any way to forcefully increase the polygon count on the vinyl disk to get rid of the jagged edges?

Wouldn't be all that hard to just make a disc from scratch. I was just using a premade model. Modifying "this" model to have higher polygon could be done, but would take more work than I feel like doing. ^^

Easy. First, be sure to increase post DoF quality to about 128 (right click preview window and select "Render Settings..."; increase the DoF).
The two values you have to worry about are on the active camera: focalDistance and aperture. focalDistance is the point of focus, and aperture is how much blur you want. This can be animated to "follow" a target or change focus.
It is easiest to modify the focal plane with it always showing. Right-click the viewport, and select Display>Show Focal Plane. Just repeat to shut it off.
