My entry for *claremanson 's baking contest
Mint Oreo cheesecake served with peppermint truffles.
Variations from the recipe:
-Standard Oreos and peppermint flavouring used instead of Mint Oreos
-Extra thick (clotted) cream used instead of double cream
-Addition of dark chocolate peppermint truffles and chocolate shavings to decorate
-Presentation in glass with cheesecake-filled Oreo on the side
Firstly, this was incredibly fun to make. Secondly, it is very difficult to saw an Oreo. The biscuits crack very easily but I was determined to do the 'slice of lemon' thing. While I am refusing to share the cheesecake, my mum got to scrape out the mixing bowl and made sure there wasn't a single atomic particle left. The truffles also go reeeeally well with it *u*

A lot of people are put of clotted cream because of it's appearance and thickness but it is awesome stuff
