Description Cup of flour, half teaspoon of salt, half cup of water. Mix, knead, separate into four small balls, squish flat, heat on hot skillet, flip. Nom nom nom.

The moment I saw this photograph I instantly recognized it, however your reciipe for a traditional Mexican tortilla isn't quite right.  One thing that's missing is the manteca ... traditionally a little bacon grease or vegetable shortning ... a natural binding agent that provides elasticity and softness ... to keep the flat breads from being too hard.


Thank you for the instant trip down memory lane.  My Mom used to make these all the time ... picked up the craft from some traditional Mexican women.


Oh, and by the by ... when handling the small balls of dough much of the skill comes in making the tortilla flat and round, like a circle.  The better they keep their shape and maintain roundness, the closer to the exact proportions the cook used for the manteca.
