I skipped legs though, and I heard they are the hardest part of a horse to draw

Indeed, this is quite common to see mistakes on horses legs, their conformation or the way they move it. The best way to draw them correctly is of course observation and practise. I remember when I started riding lessons when I was 10, the first thing I did once back home was to draw efter the horse conformation sheet from the encyclopedia, to learn all the names of the body parts I think it helped a lot.

Yes, undoubtedly, knowing the anatomy does help a lot. And being around horses Did you want to start drawing horses when you did the study or was it a general interest in them?
