Description Pumpkin cookies

Cute and easy
1 cup butter, 1 cup sugar, 1 cup 1/4 pumpkin, 1 Ts vanilla, 3/4cup almond meal, 1 ts salt, 1 1/4 ts cinnamon, 1/2 allspice, 1/2 nutmeg, 2 c flour.. candied almonds and caramel for decor

Let the dough chill overnight, shape 1in1/2 balls and make the ridges with a knife. Bake at 350F for 20 mns

Play with decor and caramel

EDIT: Version 2.0 was even better !
- I added some raisins I put overnight in rum in the center of the ball.
- I rolled the ball in raw sugar.
- I baked a tad longer.
- I swapped the almonds for Cashew nuts.

It was even better!
The raisins make the center interesting and the crunchy sugar all around goes really well with the soft texture of the pumpkin dough <3 I will post pic soon!

I'm just wondering... should I put this in my favorites on the merit of the photo, or wait to bake and then see what it tastes like?

OMNOMNOMNOM... Too bad I don't get the recipe... (how DO you spell that!!??) Anyway... how much is a "cup"?? Is it any kind of cup? Is it fresh pumpkin or something you buy? I wanna try them!

teehee... Google could tell you that a cup is roughly 130 gr of flour [link]

As for pumpkin, it is up to you. Brave you might buy a pumpkin, cook it and turn it into puree or lazy you can just buy a can

Well, since I'm in Sweden I'm not gonna try and buy a fresh one. Can be hard. We don't really eat pumpinks and the ones you can buy are small and mainly for decoration. So I'd go for trying to buy some finished stuff then. If I can find some. Thanks!

Butternut or pepper? Pepper as in the spice? I have no idea what butternut is. But I could see if they have it somewhere. Thanx for the tip.

They sounds really yummy and look so cute! Have you ever tried rolling out the dough and using seasonal-shaped cookie cutters instead of making the pumpkins though?
