For DoF you can use Radius or F/Stop (I have feeling that second one is for more natural DoF, while Radius for macro photo stuff) and adjust place where it focus by Distance value.If you don't know what distance it needs and you don't want it to focus on centre of model (or add new empty object to make it control focus) you can always turn on the Limits in Display tab of Camera. It will allow you to see on what distance this camera focus is.Unless you already know that... If you have old camera (i mean the physical one, not from Blender ) which doesn't have automatic focus adjustment and stuff you can check in it how camera reacts on some settings and by that learn how to place camera and dof strength to get it realistic. At least that's how I do it.

I always use an empty object to set my focus and honestly I didn't know about the radius and F/stop ,I usually just use what's easier Anyways Thanks a bunch for the advice I'll check if we still have our old camera and definitely do that!
