As for the "why is Ciel the pure one" issue, I've always thought that it's because he is so selfish and not bothered by "love", which demons find disgusting. The idea is that children are naturally selfish, but learn to love and become influenced by people. Ciel doesn't let himself get influenced by staying aloof, therefore staying "pure". Alois loves Luka and Claude, so he has become an "impure human".
That's what I think, anyway... owo
