maybe it`s the kind of paper you`re using.  I made a lot of horrible mistakes and terrible paintings using the wrong paper. 
I just learned ( and am still learning) to use watercolor, But I`m also using high guality German material (because I went to Germany and bought it cheap)
You would also need some VERY soft brushes to be able not to make wrong lines and let it drop paint or water. 
The rest is generally easy and mixing colours and experimenting. there are a LOT of effects and techiques I don`t know how to do yet, so I just go on trying.

I have Bristol Board paper, a thick cardboard-like paper that is heavy and hard to tear when you erase. It also can handle paints.
