Description Tough winters in Northeast North America often rewarded indigenous people with the first harvest of the new year by using the sap of maple trees to boil down to a sugar substance that provided fresh nutrition and energy to get through the remaining part of the cold season. These peoples then showed European settlers how to process the running of the trees fluids from branches to the roots for consumption and today to a $400 million dollar (USD) industry. But most harvesters in the US are local farmers and foresters.
