These smooth and fine sweets (really melts in the mouth) are called rakugan (a special refined sugar and rice flour {plus some natural colors} wet mixture pressed into various shapes) - as a kind of higashi (dry sweets category) are served on a wooden tray to complement the taste of the tea.
