Not too sure about the open boat. Even if the dinos don't bite, that doesn't rule out them trying to play with someone who falls overboard. Or of course someone just drowning if they fall overboard. Because tourons.

Look unsafe. Could those mosasaurs possibly knock the boat over or try to snatch people from the boat?

Even when someone falls overboard? The gunwale on that doesn't come up high enough to stop someone from falling out because they were raising themselves up too high. There should be an acryllic safety wall extending up from it or something.
